Keto Avocado and Bacon Salad Recipe

Ingredients:

Salad

2 ripe avocados, peeled, pitted, and sliced

6 slices of crispy bacon, crumbled

1 cup cherry tomatoes, halved

4 cups mixed salad greens (lettuce, spinach, arugula, etc.)

Dressing

3 tablespoons olive oil

2 tablespoons fresh lemon juice

1 teaspoon Dijon mustard

1 clove garlic, minced

Salt and pepper, to taste

Instructions:

Cook the bacon until crispy and then crumble it into small pieces. Halve the cherry tomatoes and slice the avocados.

In a large salad bowl, combine the mixed salad greens, sliced avocados, halved cherry tomatoes, and crumbled bacon.

Make the Dressing

In a small bowl, whisk together the olive oil, fresh lemon juice, Dijon mustard, minced garlic, and a pinch of salt and pepper. Adjust the seasoning to taste.

Drizzle the dressing over the salad ingredients. Gently toss the greens, avocados, tomatoes, and bacon with the dressing.

Divide the keto avocado and bacon salad among serving plates. If desired, you can sprinkle extra bacon bits on top for an extra crunch.
