- 1 cup (2 sticks) unsalted butter, cold and cubed
- 6-8 tablespoons ice water
For the Apple Filling:
- 6-7 medium-sized apples (a mix of Granny Smith and Honeycrisp), peeled, cored, and thinly sliced
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, cut into small pieces
For Assembly:
- 1 egg (for egg wash)
- 1 tablespoon milk or cream (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions:
For the Pie Crust:
In a large mixing bowl, combine the flour, salt, and sugar.
Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your hands to work the butter into the flour mixture until it resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing with a fork until the dough begins to come together.
Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
For the Apple Filling:
In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, salt, lemon juice, and vanilla extract. Toss until the apples are evenly coated.
Assembly:
Preheat your oven to 425°F (220°C). Place a baking sheet on the lower rack to catch any potential drips.
On a floured surface, roll out one of the chilled pie dough disks into a circle to fit a 9-inch pie dish.
Gently place the rolled-out dough into the pie dish, allowing any excess dough to hang over the edges.
Pour the apple filling into the pie crust, spreading it evenly.
Dot the filling with small pieces of butter.
Roll out the second pie dough disk and place it over the apples. Trim any excess dough and crimp the edges to seal the pie.
In a small bowl, whisk together the egg and milk or cream to create an egg wash. Brush the top crust with the egg wash.
Using a sharp knife, make a few small slits in the top crust to allow steam to escape.
Sprinkle the top crust with granulated sugar for a lovely, golden finish.
Place the pie on the preheated baking sheet and bake at 425°F (220°C) for 15 minutes. Then reduce the oven temperature to 375°F (190°C) and bake for an additional 40-45 minutes, or until the crust is golden brown, and the filling is bubbling.
