Griddle Mastery: Flavorful Stir-Fried Noodles with Veggies Recipe

Ingredients:

  • 8 ounces of your favorite noodles (such as udon, rice, or egg noodles)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced (use any color you prefer)
  • 1 carrot, julienned
  • 1 cup broccoli florets
  • 1 cup snap peas, trimmed
  • 1 cup mushrooms, sliced
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions:

Prepare the Noodles: Cook the noodles according to the package instructions until they are al dente. Drain and set aside.

Prepare the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and red pepper flakes. Set aside.

Place your griddle over medium-high heat and let it preheat for a few minutes. You can test if it’s ready by flicking a few drops of water onto the surface – they should sizzle and evaporate quickly.

Add 1 tablespoon of vegetable oil to the griddle and swirl it around to coat the surface. Add the minced garlic and sliced onion. Stir-fry for about 1 minute until they start to soften.

Push the garlic and onions to one side of the griddle and add the remaining 1 tablespoon of oil to the other side. Add the bell pepper, carrot, broccoli, snap peas, and mushrooms. Stir-fry the veggies for about 4-5 minutes or until they become tender yet crisp.

Now, combine the stir-fried veggies with the cooked noodles on the griddle. Toss everything together.

Pour the prepared sauce evenly over the noodles and veggies. Continue to stir-fry for another 2-3 minutes to heat the sauce thoroughly. Make sure everything is well coated.

Taste and adjust the seasoning with salt and pepper as needed. If you prefer a saucier dish, you can add more soy sauce or oyster sauce. Garnish with fresh cilantro or green onions if desired.
